The crab current has detailed texture making it look like it's under water, the new crab is a mat grey. Other differences like how the current crab's stone and eye seem to glow, new crab again is a flat red.
Most of the new stuff looks like this, no or missing detail the old textures have. New meshes are great but the textures need a touch up, we are likely going to be looking at these for a very long time, I agree, that why they should not look like the Fill tool was used exclusively. Also I'm not sure if it's because I'm colorblind (Tritanomaly/Tritanopia) but the vast differences between old and new textures make me think they weren't even trying to get close to the old colors.
In my opinion i like karkin's new model and the other jem crabs are awesome too
my favorite is the green one
