I personally used the macro:

/startattack
/cast counter shot
/stopattack

and as I was falling, just Disengaged, and waited for the pet to come close, then tamed.

A bit late but I found you could use the Essence Swapper on the Moonfall Riding Hippogryph during the "Air Superiority" world quest in Suramar. It has the same look as the mount you get from Glory of the Legion Hero (maybe a little more purple but I'm not sure).

when you leave the raid it will reset.

It looks like relogging in a non-raid will reset your Hati to normal size, but you can redo the glitch just fine.
Sucks.

So i just went into SoO LFR to tame Thok... I tamed him, he retained his huge size. That bird is Kil'uun from Talador IIRC. Not sure why it's so large, maybe that's how large it is when you tame it? Maybe you can do some testing on Razorgore, the first boss in BWL? That orb you use is technically a mind control with a very small cooldown, and when you use it, Razorgore DOES become your pet during the MC. Imagine having Razorgore as Hati...

Tried using the Gnomish Universal Remote on Mechanicals to see if you could get some weird robot pets, but the trinket is a channeled cast and breaks when you try to use the Essence Swapper, though the Mechanical you control is classified as a pet.

Since there's size issues and whatnot, has anyone tried massive pets, like Hozzer (Polar Bear, Howling Fjord) and Terrokarrantula (red spider, Terrokar Forest)? Would they grow huge, or just be average? Tamed Terokkarantula just to test this, and transformed it into the Demon. It was a really small...

There is a world quest in Val'sharah called "Lost Wisp" that has you growing trees around a fish infested lake as a Wisp. This Wisp is technically a pet and using the Essence Swapper will work on it.
