It is. That was proven awhile back. The Sarltooth you tame wont change to the skeletal one.

All the beasts from Zul Gurub will disappear - but there are no uniques as far as I am aware.

Currently the Sithid Swarmer is the only pet that changes into something that is different (and unobtainable) in Cataclysm - but that can change before it goes live unfortunately.

*nod* Lots and lots of beasts are being retired - but no *looks* are being retired. So if there is a specific pet you want for sentimental reasons you might want to grab it now. But if it's a look you're after, you needn't hurry. It will still be there.
