Goblins should start with Mechanical Gorilla.
Mechanical makes sense with them, and Gorilla gives a good throwback to being on the islands.

No reason to give both humans and orcs wolves. Humans being horses makes more sense thematically, now that they're tameable.

Humans getting a wolf is just fine. Dogs are man's best friend after all, and seeing as how dogs came from wolves, it's perfectly reasonable for Human hunters to have wolves. Now, Orcs should have worgs or dire wolves instead, allowing both to start with a "wolf" pet, but with both being different enough to be unique. Granted, all the non-worg wolf models are dated beyond belief, but still!

I think Draenei are fine with a talbuk, I don’t think a hippogryph would be as good as a nightsaber, but the rest make sense, and I think the forsaken should start with a undead hound, or even a stitched darkhound would be good

I didn't even check Horde Pandaren, I assumed they'd be the same. What an odd choice.

Humans getting wolves as a stand in for dogs makes sense, if only we didn’t already have a hound pet family too.
Too bad we still don’t have more real hound breeds than the mastiffs. Otherwise, Gilneans could start with a mastiff and humans with another breed of dog.
We have pugs, brewpups (St. Bernards) and corgis as battle pets. It’s time we got more as hunter pets too.

My issue I guess is that I'd really like for the pets to match the ones shown on the character creation screen.
I really like most the new pets, changes I'd like to see though are:
Night Elf - Night saber, it's weird and mildly upsetting like everyone is saying.
Draenei - Draenor Elekk.
Alliance Pandaren: Crane.
Tauren: Thunder Lizard or Woolly Kodo.
Goblin: Rocket Chicken or Exploding Sheep.
Humans and orcs both having wolves is weird to me, but they fit both really well. Giving orcs an armored draenor boar is all I can really think of.

I hate to be the whiner, but in this instance, it seems like *everyone* gets a new or updated model for their starter pets, except BE, who have the, at this point, quite dated dragonhawk.
I like dragonhawks a lot, but goodness the model is old now, and there are so few of them period, that the chances of them being updated at any point is remote.
Maybe BE could get a mana wyrm? or one of the mana serpent models from WotLK?

I kinda wish the draenei, both regular and LFD, would start with something kinda alien like them, like the sporebat mentioned, or a panthera or netherray of some kind. Kinda emphasize they're not from around here.

The only issue with Night Elves starting with a Hippogryph is that they are a skill tame, and Tome of the Hybrid Beast requires level 45 to use.

Yes, but Tome of Hybrid Beasts is part of a reward for completing the Hunter Class Order Hall Campaign. Goblins don't (even though they should) start with a mechanical, just Gnomes and mechagnomes. All 3 have the ability pre-unlocked because of their race's theme. Similar to Zandalari's Direhorns.
(Tome of Hybrid Beasts should be an one use account-wide unlock in Shadowlands since the Survival and Marksmanship versions are, especially with the leveling revamp, but that's a topic for another thread.)
Mana Ray for Draenei would be cool. Native to Argus, unique look, newer model, and alien-looking. Moths are pretty outdated.
Mecha gorilla for goblins seems too... Safe? Rocket chicken or Mecha Scorpion from SoO gets my vote, fits their racial identity much better and would give them a harder to come by appearance.
