The beasts introduced so far have been great in their own right and I am happy for anyone who is excited to tame one but I'm not all that interested. I'm holding onto the hope that Hydras will be one of the later additions before the MoP launch. I also have some personal preferences reserved for Hippogryphs, Gryphons, Wyverns, Arcane/Mana Wyrms along with brand new species such as Frogs/Toads, and Dragonflies.
Once (and if) these beasts become tamable, anything else beyond that is just an extra treat.

Edit: More on-topic, I saw the rare hydra outside of Wailing Caverns...if those become tamable, I'm pretty sure Ziarre's going to be camping that one. It was gorgeous.

I envision them to stand somewhere between boars and dogs in height (medium size but not huge) if they made it into the game. Low to the ground in stature but able to leap into the air for movement.
Originally, I had the size of beetles or turtles in mind but I felt a frog or toad of THAT bulk and size would be way too big.
