Unfortunately, there are probably just too many people repulsed by insects to make pouring hours of development time into new creature models worthwhile.
(And Blizzard has said that new creature/NPC models are the most expensive and time-consuming aspects of new content to produce).
Better to make some more cats, wolves, and cat and wolf spirit beasts.
Which is a shame, because insects are some of the most diverse and fantasy-like creatures that exist in our own world.
Just a few examples of what I'd love to see.

Assassin Bugs
Various horned/tiger variations of the Beetle family

Antlions or other similar creatures

Mantidflies

Leaf-Mimicking Insects (the orchid mantids' wings are
really cool, too)

Dragonflies (not the scrapped versions we got in WoD)

Centipedes (Not insects - but still,
Blizzard please!)

Other Bizarre Arthropods - Vinegaroons, Whipspiders, and Solifuges, oh my!
We can probably expect one new arthropod family every three expansions, if we're lucky. Hopefully sandreavers become tamable at some point, as they are basically centipedes + solifuges.
