How about the Nerubian Skitterlings and Flyers? Or did I overlook those?
No, but they seem to be intelligent. At least, some in Northrend were.
I could only find one flyer that was to my knowledge. Skitterlings seem like animals entirely.
I might be wrong, of course, but those two would make for cool pets if Blizzard is okay with them. I think they're worth considering, but I'll defer to your expertise in this case.

True The only other issue currently is that they're adding undeads to their related families and there isn't a definite family for those
Skitterers could be spiders or beetles.
Flyers.. yeah, not so sure. Could be Blood Beasts, but idk.
I'd welcome Nerubians becoming tameable through a questline and given their own family.
If Blizzard wanted to they could tie it to Argent Crusade or Knights of the Ebon Blade rep, or both, or give the Nerubians a faction (the former is easier to implement). Once Exalted, you get a breadcrumb item from the Seer outside of Azjol-Nerub, whose name escapes me, in the mail asking you to meet him there. Then it kicks off a quest chain that results in the Nerubians ultimately deciding "Yes, we trust you with the safety of our worker drones." As a result, the non-intelligent/non-speaking, however you want to say it, Nerubians become tameable.
Blood beasts are specifically beasts created/empowered from the blood of G’huun, so it is actually a rather limited family. Nerubians were not created by G’huun’s blood and evolved on their own from the original Aqiri.
@Kaydia I think that is a great idea, it is just a matter of them actually doing that. I would’ve preferred that they did something like that for Dread Ravens and Kunchong, but sadly not.

You could argue that the act of undeath removed their "sentience" and therefore they are now good to be Mr Fluffy.
We haven’t really seen that, though. If you look at Undead Nerubians, they are still capable of basically everything they could in life, they just can’t do a lot of things of their own free will.
Darkshade seems to have a spectral effect, the other two may or may not still look ghostly once tamed. If they look solid and normal there's not much point making them tameable, but maybe if they stay ghostly....
Stretching it a bit for this one, but it makes 100% sense: https://www.wowhead.com/npc=84872/oskiira-the-vengeful
Oskiira The Vengeful is marked as a beast (and an untameable one at that), but is very definitely an undead creature, considering the nearby corpse of the Dread Raven.
It's presently in the list, under 'Dread Raven', but with the skin being so unique/ghostly, and the obvious 'Undead' status with the story told in picture around it, I wanted to add it here.
Just throwing this in here... but with the chance to have a nerubian swarmer as a mount, hopefully that increases the chance that they will become tameable pets!
Nerubian Swarmer – When the Helm of Domination shattered, the Nerubians under the control of the Lich King were unleashed. Some were captured by the Argent Crusade and turned by their allies in the Ebon Blade. Now their spidery claws are put to use as mounts, skittering through the frozen tundra of Icecrown in pursuit of the rampaging undead.

Undead hunter able to tame undead beast in pre patch ?
Yes. As long as they are the appropriate level. Remember that Exotic Beasts' taming level has been raised from what it is now (unless they rolled that back).
