Sambas. He's not limited to exotic, he represents cataclysm/current content, and he's recognizable/popular.

A couple of suggestions that are new to Cataclysm:
scarab beetle --various colors, tameable by everyone, and an Uldum icon
Ainamiss the Hive Queen --obvious choice, but exotic

What about a white tallstrider they allways get left out for there colourfull bros....

I think almost any Tallstrider gets left out apart from Mazzarache or clutchmother.
My votes as of now are for:
Sporebat (agreeing with lilatha)
Crab (red)
Devilsaur (tyrant or Krush)
Tallstrider (white perhaps? as cowmuflage mentioned)

I love sporebats! since they had an ability in Wrath I now have one on my main and my level 72 hunter :B They're by far the more exotic looking pets out there!

I'd have to say Loque'nahak and Humar represent the hunter pet the best from all the beasts in the game (Loque probably more so since Pitch), although Sian-Rotam/Echyakee and Rak'shiri also are pretty iconic.

I think a sporebat would be a good idea, just because they have never really been a popular pet, ever.

My preferences (in no particular order):
1. Chitter (<3)
2. Blue Tallstrider (matches Mania's Arcania)
3. Sporebat (it's the best pet!)
4. Shango (he's gorgeous and maintains the cat theme)
