Murlocs, naga (loved the battlemaiden-quests!), dryads, vrykul (I like the quest/area where you become female vrykul), dragons, centaur.

I forgot to mention Mantids.
From what I have seen they seem to be a pretty cool looking race, so I would pick them as a playable race as well.
Of course, it could be just me.

For me it would be Naga, Vrykul, Arakkoa, Jinyu (if those are the fish people in MoP) and Harpies.
I'd also like to play different Troll (Undead, Sand and Ice) and Dwarf races (Wildhammer and Dark Iron), and the Broken have always appealed to me. I'd rather enjoy a demonic Eredar too.
