I forgot to mention I use PetEmote now too! haha. I just started it a few weeks ago and I love it!

I use:
NPCScan and Overlay
AckisRecipeList - tells you what recipes you are missing and where to get them
AtlasLoot
Archy - allows you to see where your arch. digsites are and how close you are to completing an artifact with a simple toggle button on your mini map
Auctionator
BankItems - allows me to see my personal bank, guild bank and bankalt's bank
CT Mailmod - lets me select and open all my mail at once
DBM, Omen and Recount - for raiding
Dominos
FriendShare - lets me transfer my friends list to every toon I have so I don't have to keep adding people
Gatherer
GupPet
HunterFocusBar - will I ever get used to focus?
RatingBuster - tells me how much of an upgrade or downgrade somthing is
Sexymap - lets me change how my map looks (this has some pretty overlays but I recently made it more simple for raiding)
SunnArt - lets me have purple around my bars =)
TipTac - lets me see what spec other players are and just general info like what guild they are in and who they are targeting
Titan - lets me see lots of handy info at the top of my screen

I really dislike anything but the normal, old-school WoW interface. I only use Recount, Omen, Atlasloot, NPCScan and Overlay, and GupPet. Those are all, and they are just the essentials for me.

I use too many addons, and really one day need to wipe the slate and bring back the more important core of addons.

Yup, me too. I love the interface as it is, and only use Recount and RatingBuster, as well as Grid on my healers. That is it.
