Aha! Straight out of Streetfighter, they are:

Okay, I think that it's NOT an insect of any sort, it's really a very specialized mammal ( or close, maybe hybrid) and that's not a chitinous exoskeleton it sports, it's bony armor plating, like a tougher rhino hide! =< Maybe. I dunno. Sounded good to me. Also, dark energies have warped their bodies.

There are a variety of advantages that are associated with being an endotherm or an ectotherm, either of which the Ravager could possess given their mechanics in-game.
But, without more information about Ravagers, it is difficult to even speculate.

Of course the presence of th the Lost Ravager in Winterspring come Cataclysm does give more credence to the idea that they are an endotherm. For both ectotherms and heterotherms would have quite a difficult time surviving in a constantly cold terrestrial environment like Winterspring.

So, with all of that said, I would agree that Ravagers are probably an endotherm.

Now on to the question of if Ravagers have an exoskeleton, or an endoskeleton. :)
There are quite a few animals with endoskeletons that have armored skin. The dermal plating that crocodiles possess is a good example of this. Jangalian's mention of the Rhino is also a good example.

That being said I believe that if we look at the morphology of the Ravager we can get a better idea.

When I look at the ravager one thing above all of the others catches my eye, its legs.
The legs do not appear to be mammalian in nature, nor do they resemble any vertebrate leg at all. (that I have seen)
Those legs are just too skinny to have an endoskeleton, dermal plating, and all the muscle and connective tissues they would need in those teeny little legs.

However the legs do resemble exoskeletal legs like those of an insect. There would be plenty of room in the legs for any necessary muscle and connective tissue inside of an exoskeletal shell.

This in combination with the fact that the "Chipped Ravager Carapace" is a drop from Ravagers, makes me fairly confident to state that the Ravagers probably have an exoskeleton. (From what we know about the animals in our world of course.)

Of course, Ravagers are a creature from a fantasy game with magic, so who knows?

One thing that I just realized was not touched on was the fact that Ravagers lay eggs. Their young are called "hatchlings."

I took a friend's new hunter toon out to Bloodmyst recently to help him tame Zarakh, and while there I tamed myself a ravager to get a really good look at one. I think this thread gave me a new appreciation for them, as I kept mine, which I had not done with any previous ravager tames. They're very unique and interesting.

Mm hmm, there's that quest in Hellfire where you have to collect/destroy Ravager eggs or something (it's been a while). Very interesting creatures, that's for sure. xD

You gather them up for a goblin, who makes omelet out of them, suggesting that their eggs are also edible. I won't say anything about the taste, though. :P

I use to be a biologist major. Most of everyone's suggestions are fairly accurate, but if you're serious about thinking about emotes, you need to keep in mind one very obvious fact: Ravagers are alien. Certain things should not need an elaboration if you're approaching this from a writers view. Burning Crusade was suppose to give the players an alien - out of this world - feel. If I was creating an emote, I'd mostly suggest alien in a not-so subtle way.

I have a Ravager using the red outlands model that I named Shrykull (http://oddworld.wikia.com/wiki/Shrykull), and I feel amazing when I go into Halls of Lightning and he gets the lightning debuffs. If only I could feed it stormchops...

I say they are the following;
Carnivorous Reptilian/Insect Beasts
Powerful Pack hunters, similarly dangerous alone
Smart hunters
Very cunning in intelligence
