I second the Warpstalker suggestion and, if SB was interested, here's a description:
Black with a gem like sheen, with it's spines looking like crystals growing from it's back. It would be awesome if they could give it that after-image effect the ethereals have.
I am still holding out hope for lava themed tames.
And since they've abandoned the worgen mount, maybe we'll see it as a spirit beast some day.

I agree with your sentiments about no more "ghost" looks. Wind Serpent with wings that resemble swirling air and a cloud-like skin.

Crab with an ever-changing watery shell, like the refraction of light through the water on the bottom of a pool.
Gorilla with a stony body criss-crossed with magma veins, similar to Obsidius from Godzilla: Unleashed.
Spider with a dark ethereal body, like darkness itself given physical form.
I would also rather see them add another spirit beast-esque pet family to deal with the elements such as you suggest. A "Wind Serpent with swirling air" would be awesome in an "Elemental Fiend" pet family and it could include a different exotic ability than a spirit beast's heal. Possibly a buff or debuff based on the specific pets element. Haste buff for Wind Serpent, the Str/Agi buff for a lava turtle, etc...
