Shouldn't need both if you have hysteria. If that's not enough, I hate to say you're doing it wrong, but you are. :/

Honestly, I've yet to try and tame him with hysteria up. Last time I lost the tame to another hunter, and I didn't have my corehound. This time I just wanna be safe :3

Well, speakin' as one troll to another, as long as you've got about 110k hp, you can do the legit method just fine with berserking. I just talked a troll through it. 
1. NR aura
2. Pull, wait for knockback, disengage at the top of it.
3. Hit ground, hit deterrence/berserking/tame immediately.
4. <3 <3 <3
5. Hug spider!

I've sat myself here and am just gonna pop BL, dismiss hound, Berserking (whether or not it works....) and hope for the best.

Honestly, the way you've described sounds MUCH easier... but won't he use his stun?

He will, but deterrence will catch it. The timing has to be spot on, which is why just knowing the strat for him isn't enough; it's perfect execution.
And yeah, this is why I love the disengage method - it's actually easier than hopping onto the rock and praying he doesn't evade. xD Plus you get to feel like an absolute badass flying through the air and such.

No, not more than Chatter and Chitter. But he's up there with them. I have different affections for all of them, but all are equally strong.
