CONFIRMED NEW FAMILIES:
There are three new pet families confirmed: Riverbeasts, Hydras and Rylaks.
Riverbeasts
There are five different colours of these heavy-duty hippopotami:
Hydras
We've waited six expansions for this! Hydras have been confirmed as a new family in WoD. There's one new model: the "Thunder Hydra", but all the old ones are also confirmed tameable, and there are quite a few!
Thunder Hydras
There are four colours of the new hydra:
Azeroth Hydras

(Was only available on Wavethrasher and Young Wavethrasher in Azshara (both removed). Hopefully some could be returned.)

Rylak is the name given to the 'skyreaver' model of chimaera (ref). It is confirmed to be tameable (ref) and to have been split off into its own family because it has ground animations (ref).
There are at least seven wild colours: black, green, red, white (officially 'pale'), silver (officially 'white'), yellow and crimson (officially 'chromatic'). The latter seems to have been created for a mount, but works perfectly on the wild model too. It was originally a rather flamboyant magenta and blue but is now a more sober red with nice yellow wings.
The original colour of the "chromatic" chimaera, now unfortunately removed:
The body skin for the Iron Skyreaver has also been observed on wild beasts, though it results in some weird marks. Perhaps they're placeholders and will be (or have already been?) replaced:
Furthermore, one or two tameable saddled versions have been discovered on the Beta. Taking into account all possible wild colour variants (the saddled mount uses the wild skins), this allows for five more looks:
Tameable armoured versions (the same as the Iron Skyreaver mount) were discovered on the Alpha server, which allows for more possible looks (including the original mount). However it's always possible these are no longer available. There are actually two model variants on this, which differ only in that one lacks the strap-on engines. We won't include both variants in the images here because they otherwise look identical:
Stags
Stags consist of deer, talbuks and gazelles. Shoveltusks were mentioned as unlikely to be included.
Antlered Deer
There are three models, the original, the reindeer/caribou and the Pandaren.
Talbuks
There are two models, the Outland and the Draenor.
Gazelles
One model, which has existed since vanilla.
NEW MODELS OR COLOURS FOR EXISTING FAMILIES:
Wolves
One new model, seemingly inspired by high quality wolf mounts such as the Kor'kron War Wolf. Apart from the wild model, there's also a saddled and a fully-armoured version, both used for player mounts. At least one armoured wolf has been found to be tameable, so they're included here as well. There are five wild colours and four armoured colours (there's no mount version of the light brown skin):
Wolves or Wolf Spirit Beasts (?)
There are three other non-mount variants of the Draenor wolf in model, a "fire" one, a "shadow" one and a "fel" one. All three seem identical in shape to the regular model and each has a single skin associated with it. These models also possess fire, shadow or fel aura effects but they aren't being rendered correctly in Wowmodelviewer. As a result, the images below are nowhere near as awesome as the beasts appear in the game. While they could be used for regular wolves, the effects also suggest they may become spirit beasts (and a comment on Twitter from Jeremy Feasel suggested this as well). If so, we'll have to wait and see!
As another potential spirit beast, the skin created for the "Iron Horde Wolf" mount works perfectly well on the standard Draenor Wolf model, and results in a really stunning look:
Finally, the new Shaman ghost wolf form, when glyphed for spectral wolf, uses the dark Draenor Wolf skin with spectral effects. This could also potentially appear as a spirit beast.
Boars
One new model, which resembles a high-textured and uncorrupted helboar. There are five wild colours:
Ravagers
One new model. Despite looking uncannily like a silithid, it has been confirmed as a new ravager (ref). There are seven different colours:
Sporebats
One new model with three colours. They're a bit more detailed than the originals:
Bats
The shiny new bat model was added to the database in MoP but wasn't implemented for wild tameable beasts. Instead it's now appeared on Draenor and in the revamp of Razorfen, with most colours available:
Raptors
One new model with at least five colours. The model far more resembles an Azeroth raptor than an Outland one and has no spines.
Clefthooves
Clefthooves are a "semi-new" family - the name and most of the models are brand new, but the existing Rhino family was merged into them. There are two new models, the new Draenor one and the original Outland one (which has also been spotted in Draenor but we're unsure if that's intentional). The saddled (mount) version of the Draenor clefthoof has also been found tameable.
Birds of Prey
There are at least two new models for Birds of Prey: kaliri and toucans.
Kaliri
There's a new Kaliri model, with four colours so far. The last, 'Sun God', actually has its own model with a fire aura.
Toucans / Axebeaks
There are four colours of these bright jungle birds:
There blue coloured axebeak above is actually a replacement. The original blue seems to have been removed, but looks like this:
It's a shame they couldn't have kept both.
Carrion Birds
Two models which originally appeared in the Throne of Thunder have now been spotted on Draenor. They were never tameable in the raid but they are this time!
The flying model comes in four colours:

Core Hounds
One new model, which also comes in a mount version. This beast is very true to the original, but much higher quality. It comes in just one colour so far, but given the art team's track record with fire creatures throughout Cataclysm and Pandaria, there's a good chance of more!
Cats
The Pandaren tiger model has been spotted in Draenor, with two new colours. Both have odd red-and-black stripes that don't seem quite real. It's possible they're works in progress and will have swirling or fire effects, but we're not sure.
Perhaps the unused "War Nightsaber Mount" colour will also be used, but we're not aware of it.
Moths
There are at least four new colours for the existing moth model.
Wasps
One new model, the Hook Wasp. These were originally announced as a new exotic pet, but have since been merged into the wasp family (ref). There are at least six colours:

Worms
There are two new colours, both very different to existing ones, for the jormungar model. Sadly so far, both have only appeared on the stationary "half a worm" model so are not tameable.
Windserpents
There is a new "blood" variant of the original (NOT Outland) windserpent model. Unfortunately we can't get a decent model shot of it at the moment, but it's essentially like an old red windserpent with swirling blood effects over its body. The only use of it so far is on an aberration so we're not likely to see it for now.
Dread Ravens
These are flaggde as Birds of Prey, but none are tameable. A tweet by Muffinus indicates they won't be tameable (though this could change). There are now four different colour variants: the original blue (used on the CE mount), purple, brown ('wind') and fiery orange ('sun'). The 'sun' colour is available on a special model with fire effects. For the armoured versions I've also included the purple skin, even though no special armour skin has been discovered for this colour yet. Instead I've used the gold armour that belongs to the blue skin.
Chimaeras

There is a new, very reptilian chimaera model which occurs as a mount in the WoD database, but for some reason it's been excluded from the game. Sadly there's a good chance we won't see it for now:

Concept art for a new tallstrider was shown at Blizzcon, but we haven't seen any evidence of a model:
