I believe the hunter preview said 3 active slots, with the possibility of beast masters having up to 5 active slots, and so far as "storage slots," we were only told "a large amount," so nothing definite.

I think we'll have time to get what we need tamed. Between the end of BC and the launch of Wrath, there was a span of time of about a month called 3.0 patch where we got to play with most if not all the new systems and got used to them before the expansion launched. Given the massive mechanics changes coming in Cataclysm, I'm almost positive we'll get the same learning period. Though pre-Cata events may be going on, we should still have time to go tame anything we want that's going "extinct."
And we'll know what we need to focus on once beta gets going and information starts coming out of there.

It's all a matter of timing. We don't know if the landscapes will start changing first (and thereby removing some of the rares) or if we get class changes first and then the gradual landscape changes.
Personally I went and tamed the two I really wanted - Clutchmother and the ghost saber. My other three spots are taken by Northrend rares. I'm not touching my stables until they're expanded, that's for sure! The sooner the better. (I dread flying in Sholazar for fear I'll run across Loque. I wouldn't be able to not tame him, I fear...)
