I saw that the bear cubs in Dragonblight got turned into rabbits, so of course I immediately went to check this out. Unfortunately, they are not somehow miraculously or accidentally tameable

I think that the rabbits may have been removed. I was in the area yesterday (farming for a toy) and didn't see any. Might've just missed them, but I didn't see any around the bears.

That's odd, I didn't even know the cubs were changed. Why did they do that?

Unintentional. There were a few other random mobs that were changed. For example, some of the Alliance prisoners in Pit of Saron started using the Troll cat avatar model. A few changes to the code can cause unintentional things like that.
