This has to be the worst quest ever even worse then the one from Legion for leather workers it took me many fails but I finally found a way to get it done.
After many fails I finally got this done by doing this.
First mount the horse and when he says begin head to center of arena make sure your camera is zoomed out in order to get a better view for when the zeppelins come out.
Wait for him to say zeppelin out and with the camera zoomed out should be easier to spot one from far away making it easier to target it then press the bola button.
He will say it again just turn the horse a little bit to see it in the distance and fire the bola for the final one turn the horse and target it keep pressing three until it comes in range and goes down.
I didn't use any macro and had plenty of time to spare.
