So I managed to find the book to tame undead pets. So I did some quick testing for PvP purposes.
DK ability "Control Undead" does not work. Gives an error to the DK that the pet can not be charmed.
Pally ability "Turn Evil" does work. Both normal and BW.
"The Beast Within" PvP talent does block the fear, as it should.

Yeah, even though they're undead in the wild, once they become your pet they are considered regular beasts and are categorized as the usual families - Undead isn't actually a separate family or specialization post-taming.
