if you change to alliance?...

I'm still not feeling it for horde on my troll hunter, and am seriously considering a change to Ally. So what happens if I work on this mount, and then change to alliance? Does it change to Frostsaber, or go away, or?...

It changes to a Winterspring riding tiger.
I'm planning on making my tauren druid an elf, and I'm looking forward to having a purple tiger to ride.

I can say from experience that it'll change to a wintersaber (and back to a ravasaur if you change back to horde) even if you don't have exalted status with the wintersaber trainer in winterspring. =)
