i really need to know which mounts i should start grinding on!

Deathcharger in Stratholm, Tiger and raptor in Zul'gurub.

I believe anzu is safe as well as the pheonix

Not sure about the whire hawkstrider from Magistrate terrace (or however its spelt)

Isn't the Deathcharger still on the loot tables of the replacement boss?

Yep, the Deathcharger is still safe.

The only mounts I'm aware of that are being removed are the two ZG mounts (The Razzashi Raptor and Zulian Tiger) and the Trial of the Crusader Mounts (Crusader's White/Black Warhorse and the Swift Alliance Steed/Swift Horde Wolf). You may want to try for the Blue drake, as that's being switched back to Malygos 10, but I believe that's about it.
