From what I've seen, a lot of Mogu are completely organic, while also a lot of Mogu are animated statues. I suspect the reason they animate stone statues is because Mogu females are relatively rare. That being said, Lei Shen probably had his consorts recently carved and animated, and the carvers decided to play a joke on em' and well. . . you know!
The issue isn't as clear-cut as you seem to make it. It seems that Mogu are flesh beings that use their dead to animate statues to boost their numbers, but there are hints pointing otherwise (for example, that all Mogu come from statues, but are "fleshified" by reverse-engineered Titan tech/Curse of Flesh). The definite judgment on this will probably be cast in 5.2. I'm on your side, but I think it's still up to change.

Considering there's quests in Kun-Lai that mention the Mogu crafting statues to be the host of souls, that is where my assumption comes from.
I know some here see the first consorts name and read it as Sven, which it may be, but if you compare it to the second consorts name I interpret it to be a stylized "u". As the letters look exactly the same and thus far the Mogu seem to use vowels following the first letter in their names. Not sure though, tried to look up the names in non stylilized print and can't find them.
