As of yet no one knows exactly what pets are being made 'extinct' if any, as because in light of several pet skins released and at far, far lower levels than previously available, IE Bone Spider, Wasp and Outland Carrion bird at levels 10-55, not to mention a tameable green warp stalker, it seems that Blizzard understands hunters don't want to see anymore extinct or retired pet skins and are going out of their way to give not only more variaty at the moment, but also moving skins around. This was proven anyways when the Felwolf skin was punted to the human starting place.
The only two uncertainties are Clutchmother skin and the Ghostsaber skin, but that's only because possibly for the saber, the statues have yet to be implimented in beta and for the Clutchmother skin, most people seem to just be skulking about where she used to spawn, instead of searching elsewhere in darkshore, or, elsewhere in Azeroth.
As Beta progresses we'll find out at anyrate.

the ghost saber statues are present and can summon the cats. So you can rest easy on those at least.

Edit: ...and on the 16th figurine... Ghost Saber pops and I tame him. (reminder: Yes, in closed beta)I know the poster above me said that Ghost Saber is still around in the beta, but I just picked up 15 Cat Figurines (in closed beta) and Ghost Saber never popped.
My highest amount of figurines picked up in live before the cat popped.... 11.
Now, I am not saying the above poster is wrong, and I know the cat randomly pops... but 15 figurines is a lot of wishful thinking that gets crushed.

Echeyakee has already been confirmed to still exist.
