Wait, there's a void mana wyrm mount? I don't see it on Warcraft Mounts or in any of the various clickbait mount articles on Wowhead. I know the saddled blue, armored blue, and (objectively coolest) armored gold, but I don't see a void one.

They haven't created a mount that uses the appearance, sadly. But the colour is attached to that model, as is an unused saddle colour that was probably designed for it.
It's in WCM as an unused look for that model. I elected to display it with that saddle, but without the helm since that displays its colour better:

Their treatment of the mana wyrm mount is weird. Like, did we really need three possible appearance options for the helm, one of which can only ever be used on specific colours? And of the three mounts added, two are just the blue mount with or without a helm, at the expense of adding more colours. Boring! The armour helm settings should have been configurable by the player, not features for separate mounts. It's the "Malibu Stacy with New Hat!" school of mount creation.

Oh wow, I somehow missed that when browsing the site. MAN, WHY IS THAT UNUSED?! Blizzard, man... I don't want to submit feedback to get the new grand wyrm mount changed, but man am I going to be sad if that goes unused. That is such a good color for a mount.

It looks like they’re trying make mama wyrms a Prey reward thing. They just went about it in a haphazard way. So my guess is we’ll see the void one in a future season. Who knows what amount of armour it’ll be wearing?

I noticed minor differences in the wrath & nightmare mount, but can’t forget to mention the hubris
- hubris & wrath are both blue, wrath has an extended blanket or something going towards the tail while the hubris only has a saddle.
- here’s a more interesting one, both the wrath & nightmare have the same colored armor, but the nightmare aside from being gold, has some holy spikes sticking out from the helmet as opposed to the lack of spikes from the wrath
Also I didn’t even know mana wyrm snouts were beaks until they dropped beaks

By the way, the mount model for the void wyrm isn't unused. It's just not something we're gonna get unless we die in Voidstorm
I noticed that when I died from being a total moron in Voidstorm that the mount was a mana wyrm. I figured "Let me just turn off the ghost effects and see what color this is", and sure enough, it's the void mana wyrm mount Wain posted on Warcraft Mounts. Well that's saddening. Not 12.0.5 info, but considering it was discussed here, I might as well keep the finding here.

It looks like we finally have a blue magmammoth that apparently appears during void assaults... but it's not tameable (yet). We know what must be done; get on ptr, target it, press F6, and beg!

Successfully found the new Warpstalker
The Hal'hadar Leystalker is found during the Cryptic Operations event that can spawn as part of Void Assaults in Eversong Woods. The NPC can't spawn as the mount version of the model, even though it is listed as one of its models on Wowhead.

Wow I always wanted this color. Looks like I’m going to add a third warp stalker to my collection if I feel like it or replace one of my warp stalkers

There are several of them in the area where the Void Strike happens and are spreadout, but they don't have a lot of health.

The Strike in which they appear either occurs rarely or I was very unlucky. I checked for days before I saw it. There were other strikes I saw maybe 6+ times in that time.
You won't have long once the event starts, as it ends as soon as enough NPCs have been killed. And people will mow their way through those tombs. When I finally found the event up, just one other person appeared and it was already hard to tame them before they killed them.

I hate to bother, but ever since I saw the Frostfangs in Den of Nalorakk, I was smitten, as it is a non-spirit version of uncorrupted Gara, which I have coveted since doing Garas quest.
If time and interest permit, might it be possible to check if this beast has been flagged as tameable on the PTR?

At least per Wowhead (Which can be inaccurate), they aren't currently tamable on the PTR. Unfortunately, due to Mythic+, Blizz tends to not make things in dungeons tamable (some exceptions).

It's a real shame they aren't

But it may be a while before new dungeon mobs are made tameable. I know occasionally new dungeon NPCs are tameable but it seems to be rare, and maybe not intended at release.

Not tameable looks, but I just noticed that the four body textures for the 12.0.5 'Sunwalker Eagle' mounts work perfectly on the wild model - in contrast to the 12.0 eagle mounts which have lines and shadows that make them look weird on the wild model.
They look pretty good! Three of them are variants on brown + green / teal, so while they all look nice the variety isn't that exciting, but the black and red one is different and quite stunning!
I've added them to our database as unused looks, in the hope that one day they'll be copied over and used:

As far as I am aware, there isn't anything being phased out or retired. The Void Strike events only temporarily change areas.

The Voidsinged Hawkstrider is now tamable. It is an armored/saddled Hawkstrider that retains a Void effect after taming. It is found during the Void Rift: Tranquil Repose event.

The Void-Touched Snapdragon is also tamable and retains the same type of Void effect.
