Ah, good to know about the ray. I haven't seen any, though I'm only now tackling Zul'Aman and haven't done Eversong (was too laggy before) or Voidstorm (haven't unlocked yet). Hooray for more skins being obtainable.
Regarding Skittish Springrunner, I'm standing at them right now and spamming F6. I only see blue and yellow as options. Pink has definitely been taken off of them.

There are two NPCs that are called Skittish Springrunner. One only uses two variants. The other has pink, or at least should.

Where is the second variant? I'm between the Sanctum of the Moon and Sanctum of the Sun, so that's one spot.

It should be closer to the southern entrance to Zul’Aman, east of the Sanctum of the Sun.

Oh, I thought they were the same ID. Yeah no, no pink here either. Wearing my F6 key down to check, and watching the animations in that window. No pink skins are appearing for either of these individual versions of the Skittish Springrunner. Same blue and yellow skins in both areas, assuming I'm in the right spots.

I’ll take a look later. Wowhead recently updated their database and one still shows as having the pink variant.

I'll spend a bit more time F6ing both sets to check as well, and I'll have idtip installed to make sure I'm at different IDs when I do so. If it was a rare skin, it'd have shown up at least once by now in the F6 menu, but no luck at all.

Update; I've been doing F6 and unicorn genocide this whole time since the last post, and I have not seen ANY pink, be it spawned or F6'd, on either of the two spawn points. The pink texture is not present on either version of Skittish Springrunner.

Verifying/Reconfirming that the zombird is indeed tameable, yay. Shame it has the horrible flaw of forgetting how to fly once tamed, but this is still nice. I almost didn't see this thing because it kept disappearing into the mist around Halazzi's shrine in Zul'Aman lol.

Nice. While they may not stand out a lot, especially compared to Midnight's other tames, that's still a win for the sake of having extra options.
I spent a few hours today doing various pet-related things instead of quests since my first beta character is straight up locked out of progression (can't start the Arator questline after having done ZA and Harandar), so I checked a few things. Mostly reconfirming funny and/or sad news.
- Kunchongs still do not have their right arms. Hopefully that gets fixed before launch, though it'd be funny to see. This happened in Dragonflight with the bulky abominations from Maldraxxus, losing their spines.
- The pink dreamrunner is, without a shadow of a doubt, limited to friendly NPCs now. I spent several HOURS checking this across all spawns that originally had it. I'm almost sick of looking at them as a result, but I wanted to verify this fact.
- The white hawkstrider (Harried, I think?) seems to not spawn very frequently. I could not find it at all all day. I spent most of the day in Eversong, and that's the one rare I never saw.
Then I took a detour into Zul'Aman because Eversong's lag was bugging me. ZA was no better today lol.
- There are amazards on the coast of Zul'Aman, right next to Eversong. These are the only ones I've seen with the pale and black skins. I know the ones by Jan'alai's shrine have red and purple, and I've not seen green or blue anywhere.
- ONE single lynx in Halazzi's shrine is attackable and tameable, while all the rest are friendly. I feel like the lone lynx was probably misflagged, because it wasn't unique in any way and there was no reason for it to be the only one.
- Said lynx was also tired. I felt bad that we could bully and enslave it. Make it friendly, Blizzard!
Finally, I saw someone having trouble with a quest in Harandar, and nobody was helping them, so I went out to catch up to their quest. I sadly took too long and that person either logged out or fixed it themselves, but either way, I went on a window shopping spree after that just to mark where the skins I want are found. This led me to find one huge problem;
- The green & tan potatoad skin is either stupidly rare or doesn't spawn. I did not find ANY with that skin, and that's the one skin I wanted more than the orange paint version. Then again, Harandar is massive, so I might have missed it.
I'm burning myself out on testing, so I'm done until the next build. I spent all day yesterday and today reporting bugs, helping others find bugs, and desperately wanting to punch idiots who think beta is early access. Mainly, I just want that lag fixed before anything else lol. EDIT: I've also still not been to Voidstorm. Hopefully my second character doesn't get locked like my first did when I go to level that one.

I've just starting wandering around in the Beta.
Arator needs a put on passive button and is now renamed Ahole cause he would not let me tame a danged thing till I got rid of him as an escort.
The new Amani Eagles might be a sleeper hit for me-just tamed one and they are rediculously gorgeous. And the new model dragonhawk is going to make me keep one as my animal companion the whole campaign I bet. They are stunning. I want to find that cream-teal-maroon one so much have been browsing the blood elf zone for it for awhile now.

If you mean this look, I believe this one's only in Zul'Aman. At least, I didn't see this skin in Eversong Woods. Saw most other colors besides this and green though.

I’ve seen the Harried Hawkstrider several times. That said, it isn’t unique. There are a few other hawkstriders that can spawn in white.
All Amazard colors are accounted for. They are found throughout the zone, namely the coasts.
All Potatoads are account for, also. I saw the ones that you were looking for earlier, myself.
The Midnight page on Petopia will show what is and is not accounted for.
Aside from the pink springrunner, which is looking like it might not be in anymore on a tamable mob, almost everything is account for. Two Trigores are not, but one is meant for a world boss and the other is on a mob that isn’t tamable. The light Dragonhawk will either stay unique to the world boss or be added as a special tame, if I had to guess. The remaining three undead Amani eagles might be saved for the first main patch of Midnight, which likely will be on the big, foggy island off the coast of Zul’Aman that happens to have a ton of undead and decay motifs all over it.
I assume that more Grimlynx will be added in unless they have other plans for them.
Harrowers and Ultradons don’t look like they will be tamable at this point, especially since the two that could be tamed were removed. I’m not counting on the one Blistercreep staying tamable or others becoming tamable.

Yes, there are a few dragonhawks that are only found in Zul’Aman.

I found him to be a pain in Alpha, too. I left feedback that he shouldn't attack anything you're taming - there are other followers that respect that so the code must exist. I mostly tried to distract him by putting him in combat with a bunch of things and then get as far away as I could and tame something before he got back to me.

I'm not far into the beta and was just getting annoyed when I saw something new while doing the intro quests outside of the Quelthenas (however it is spelled) and he would kill whatever I tried to tame. I eventually got rid of him and go go on a taming spree, he was just irksome.

If you toss a Freezing Tap at the mob does he still try to attack it? That's usually my go-to for scripted escort NPCs, most seem to be coded to ignore a target if it has any form of CC on it, but if not that's super annoying.
