Mammoths, Elekks, Clefthoofs, Stags, Zhevras and others

Any word or hint that we might be able to tame any of the pachyderms, ungulates, rhino cousins and other beasties we love?

I believe Kalliope realizes that and her only point was that there's no "lore" impediment to having them tameable. Whether or not Blizzard make them tameable is upon their whim. Along similar lines, anyone who has explored Deepholm on the beta will have noticed that the humanoid NPCs there tame basilisks as pets.
