I saw this Elite Turtle guy in Hyjal and I wish we could tame him.... SO epic. He was named "Nemesis" =)

Also there were "normal" looking Core Hounds in Hyjal that were beasts but couldn't be tamed I noticed.

The most interesting thing in these Beta notes for me was this: Warrior - Protection * Intervene no longer has a 8 yards minimum range.
