Stuns don't function as interrupts unless they have an interrupt component (like prot paladin Hammer of Justice pre-4.0.6) There are some abilities on strict cooldowns that you can stun to "interrupt" on adds (like toxic spores on Anshel's adds), but as a rule bosses can't be stunned by puny mortals (gongs don't count).
What pet you pick depends on how often you need the interrupt, what you need to interrupt... (leaving a "smartcast" on for Maloriak isn't a good idea, trust me) and how often the pet has to switch targets.

Well yes, I would assume if you're relying on it to interrupt one or two specific boss abilities, you'd want to micro-manage it. There's so many classes and specs these days with interrupts now though, I think it would be a little odd to rely on a hunter and its pet. But, I also haven't done any Cata raiding so take that with a grain of salt.

Well, the consensus seems to be that moths are the way to go. xD I might go and pick up a white one - I actually raided through 3.0 with one, back when wolves were *the pet*, just to be a rebel. >.>

I'm not sure how much it matters to you, but the moths have the longest cooldown on their interrupt, but have the longest spell school lock out. But they are so fluffy and cute that I find I like using them better.
I'm also too lazy to micro-manage a nether ray.

I haven't had much luck with the gorilla's Pummel. Supposedly it's smart cast, but I've yet to have it interrupt Halfus even once.

Was gonna say nether ray, but a moth works too. Forgot they can interrupt now, heh.
Still, for SV spec, nether ray might be better, but it'd be only slightly if it was.

I use a nether ray. Personally find the moth fluttering annoying but that's just me
You'll still have to micro manage no matter what pet you choose because you don't want to interrupt everything in every situation -example would be first boss in SFK. I always interrupt every other pain and suffering but I wouldn't want it to interrupt stay of execution, which is usually left to tank's discretion.
