Thinking outside of the hunter range for a moment, I would assume professions would be one of the bigger setbacks you will come across. As far as I know your proffs will not get boosted with you. (Although i remember hearing something about lvl 60s with proffs will have maxed proffs if boosted to 90?)
One of the perks of leveling is gathering materials as you go. it can be a huge money saver since some lower level mats are crazy expensive.
Also I am fairly certain mysterious camel figurines are effected by the phase you are in. I tried to give one to a guildy but I had most of the quests done and he had none of them done so both me and the rare were phased to him so another player got it.
aside from the spirit beasts in hyjal you will also not be able to go tame anything in the molten front. the cat, crab and various spiders will be locked. the spirits beasts actually unlock sooner than the stuff inside molten front since you need to do a few dailies and another short quest line to open up the portal.
I know there is at least one rare in jade forest that is phased. the lizard guy in the cave. he drops a boe epic crossbow.
You will not have the water breathing/speed buff in vajsh.
all of the cata portals will not be open.
the vale will probably not be properly unlocked and many of the rares should be phased.
the klaxxi may be effected since you are introduced to them via quest line. This would need confirmation. shouldn't be a big problem unless you want xmog.
the scryers and...whatever the other faction is called- will be undecided in shatt. not really a big deal but if you are a blood elf/ draenei you may be hostile to your opposing race.
there may be some flight paths missing in mop where you had to go on a quest to help your faction establish some kind of foothold. other places will be constantly under attack.
you will not have a farm.
there are lots of zones you will be phased in. if you are flying on or giving a ride to a friend with a two person mount they will most likely be dismounted when you phase or visa versa.
your quests should be untouched. any quest related pets that can only be summoned once will still be there if you change your mind and decide you want one. the same goes for quest related xmog and vanity items that you may still be missing.
Most of these are fairly minor or commonplace even among 90s that have been leveled. Some of them will be annoying but many of these things will not matter that much since it is/will be old content.

thank you for the answers and advice I will not boost Xenaswolf also was talking to my girlfriend and she wants me to level it the normal way and well being the boyfriend I am for her I am going to do it her way but I do have a hunter Devilhunter who is past 60 and has two professions so I may boost her now.

Thats a good idea. If you guys get annoyed and want to boost later past 60 is a good idea. 2 free max professions are very handy (i learnt this the hard way) even if you have to buy all the receipes afterwards. And really lvling to 60 is fairly cakewalk with heirlooms. That's how my first hunter and now 90 Shadowhowl got to 85 I used looms on him was a blast also the hard part was getting him past 85 lol

I think unlocking vashjr is minor effort, at least after the RP boat trip. The first quest is to get underwater breathing, and the seahorse is account wide. If you haven't done vashjr ever, then ya, getting the seahorse is a few more quests. Mostly the annoying one where you have to wait for some RP battle to trigger correctly.

They don't actually miss anything as quests and dungeon can be done as long as you are at or beyond the appropiate level. Even my non boosted toons avoid cata quests like a plague and at 90 did fireland for pet like a breeze.
