Let it smack you in the face for a bit, throw the meat, then hit tame right away. (adjust accordingly after trial and error)
I saw two videos, both saying meat-trap-tame. However, I couldn't really get it so out of frustration, I went for the aggro-meat-tame approach and it was a success. This was done with the help of a friend who had the quest.
I think the sweet spot is right after the meat was thrown. Depending on your haste, you'd have to time when to tame. Mine was about 2-3 seconds after the meat was thrown just right before the wolf eats.
There were a couple of errors after the tame which made me think I failed yet again: there was no new wolf in the stable, and I couldn't tame (message was "you are already summoning" or something like that). So I had to quit WoW... and when I came back, the wolf was there.
i picked him up yesterday with the meat and trap method. waited until the trap timer hit 16 sec then started tame. he despawned at the end of tame and i had to log out and back in but he was there ready to fight something. took me about 20 tries.
btw - even though i haven't seen anyone else from Tanaris on these forums if any horde players want this guy let me know. i will be deleting quest so i can help out.
Just picked him up after many MANY tries. I didn't use a trap, but timed it so that I hit tame as soon as i saw him start eating, with my haste rating being 543.

1. Friend casts bait to wolf.
2. Wolf runs towards him.
3. Pauses on way.. I counted "1 and..." (just under 2 secs)
4. Cast tame beast.
5. Cast finished and pet was NOT in call box. (I went to tame a second try and was told i had an active summon)
6. Went to stable master - wolf was in there and could be summoned.
7. Arrived oily, and aggressive!
Took me a couple of time for timing. A friend of mine tamed him just after me and took about 3 tries.
