Really depends on what you're looking for in a character! I love all the Horde races in their own ways.
Are you just looking for a specific character type or rpability? Tauren are honorable and spiritual, undead are sinister and clever, trolls can be deadly and cunning but also loyal to the horde, the blood elves are a bit arrogant and proud but don't underestimate them, and who could forget the battle-ready orcs, who can be bloodthirsty and vicious but follow their own code of honor as well. Any of these traits can make picking any race/class combo fun.
Or, are you looking for 'what class most fits what race'? Undeads strike me as rogues and warlocks, for example, while blood elves scream 'mage' at me, tauren are naturally druids, trolls are great shamans, and orcs always strike me as warriors. And I'm sure other people would have other opinions on the matter too.
OOOOR are you just going for straight race stats and what classes they benefit? Orcs, for example, have a racial trait that benefits pets under their command, so they'd make great hunters. Blood elves are great for casters because of their racial trait, which can boost your mana at the last minute and save your butt by giving you the opportunity to cast an extra spell or two when you're low. Trolls have a natural regen that I've always found rather useful, and a berserking trait that can save your hide. Tauren have a nice stamina boost that helps with tanking classes, and their 'warstomp' move is a natural stun that comes in really useful (especially at lowbie levels when you're outmatched and need to run!) Finally, undeads have some nice survivability with their 'will of the foresaken' that lets them break some things like fear, and their ability to eat corpses to boost health in a tough situation. All of them are very useful abilities (among others) that can help you with almost any class you choose to play, some more than others.
OR....is it just about aesthetics? Some days I love playing my blood elf because he looks all charming and suave, while other days I love playing my tauren or trolls because I feel like I can take on anything since I'm so dang tough. That, of course, is a choice entirely up to you.
Above all, just experiment and have fun with it, that's really what it's all about.
