I think Veph nailed it with the word scrutinize. Even the actions of real people and animals can look weird if you freeze-frame them, stare at them intently, notice all their twists and bulges and flaws. I, however, do think Malorne's skin should remain unique since he is, as it has been said multiple times, a major lore figure. In the case of Har'koa and Loque'nahak, Har'koa may be a demi-goddess herself, but she is considered a minor lore character. Having a duplicate of her model, to me, seems to be far less of an issue than having one of THE Malorne.
Overall... Stags. Yes please. I don't care if it wouldn't make much sense with my worgen hunter, who'd likely consider it lunch, I'd love to see them tamable.
Addendum: If they can't be tamable, making them an accessible mount (outside of reindeer) would be amazing.

Plus, if Malorne was tamable, you could practically never use him on a role-playing server. "Oh hi, this is my pet stag, he's Cenarius's dad." >.>
Now I have nothing against regular stags becoming tamable
