Rogues have actually been pretty enjoyable as well, though I've never been far past level 30, so I can't speak for the higher levels.
I managed to get a Warrior to 60 but I got bored of her, and I've never had any luck with DKs myself.

Rogues are also a fun class, but I'd actually warn against going Combat like everyone says to. I found combat to be extremely boring. >.< Sub and Assassination are a little more interesting. I'd say go Rogue if you're okay with being a glass cannon- you'll kill stuff fast, but man, even a few seconds of being beat on will really kill your health.
Warriors... I can't really say. Tanking on a warrior is engaging, exciting, and hard- they're the toughest tank class and take the most thought to play. I can't say much for Fury/Arms, though, as I haven't touched them much. I remember Fury being boring, but that was a long time ago. I have heard good things about Arms, though. My warrior has been stuck at 60-some for a while, because while I enjoy playing him (he's a tank), I enjoy my prot pally more.
I'm... really trying with DKs. I have trouble finding them very fun myself- though I haven't touched tanking much. Frost pulls really big numbers, but oddly enough, the attack sound effects drive me nuts. Your biggest attack that does huge damage should not make a gentle "woosh" sound as it cuts the enemy in half. ;_;

The other melee class I enjoy is rogue. I find their high speed and flurry of attacks to be a nice change from the normally slower attacks of tanking or 2h frost. I like combat for the nice damage, but I think Assassin or sub can be more engaging.

I'm currently level 89 on my warrior tank, and I can solo the Pandaria rares with no problems. Kept dying on my death knight when I levelled him, but haven't died once on my warrior.
But I enjoy all classes really, so it's a hard choice. But the one I have played the most must be my enhancement shaman, but I guess that doesn't go into this category.

I'll be waiting on the highland, with its wonderful serenity.

Didn't feel as tanky on my Warrior because she's an Undead lady wearing goggles. But being able to flip around in plate as a bony corpse is always fun. Then again, I don't really play Warrior anymore... Maybe I should change that now that WoD will be eliminating the need for multiple armor sets. I could finally try Warrior DPS.
Prot Paladin has like a bajillion shielding effects that it can put on itself. And Ret hurts a lot... at least in single-player PvE. However, I feel like the armor was my main draw to Paladin, with Merciless Gladiator and Tier 7 and the like.
Rogues are pretty awesome. No one skips trash in old raids like Rogues. No one else attacks insanely fast like Rogues under the effect of Slice and Dice. And, of course, nobody in the world stunlocks like them (although in solo PvE, Cheap Shot will likely be enough to keep you from taking too much damage.)
Blood is a wonderful solo spec. Dying doesn't happen very often when you're constantly draining HP and proccing Blood Shield. Unholy's pretty cool too. Ever want to have a pet hulking undead monstrosity? Go Unholy and you can have one. But I kinda retired my DK too.
