Can you reset your crafting/gathering specilasation skills?

Yes, you can reset your crafting and gathering. If you go to your professions page, there should be a little red ∅ next to the profession in question. Click that to unlearn the profession, and then you can go and learn a new one.

As for dragon riding talents... I am unsure. But once you collect all the glyphs, I'm almost certain that that is enough where you can get all talents. There's a guide on wowhead with all Glyph locations.

Yeah, there isn't a reason to reset the Dragonriding Talents. There are enough sigils to get all of the talents.

Oki more questions... how do i get more dragons to choose from?
Why is renown so different? I gotten to the centaur quests and im highest in renown with them even though i done the other questlinies in the first area.
I see repetables for centaurs but none in the first area
