Faction Specific Pets
I recently found out that the hooded skeletal devilsaur is unique to a horde specific zandalar quest. After getting over my extreme disappointment, it got me thinking. Are there others like this? I’ve been looking everywhere for a comprehensive list and I can’t find it. So I figured I’d ask here. I know about the aforementioned devilsaur, the ghostly hound thing from the blood elf heritage quest, and the old armored wolf model only alliance can get unless you’ve got that toy that makes everyone hostile. Are there any others I’m missing? Thanks a ton in advance!

If you go to the Pet Search in the Petopia guide, under tameability there are options for alliance-only and horde-only.

You have the gorilla from the Zuldazar raid, the Alliance only undead, and the Horde alive.
Personally, I have a Theramore Hound in my hunters, or the Stormwind Hound (Hordes only), an Alliance-only undead Hound from Fjord, and a few others.
If you change the faction parameters between enemy and friend, you can see them all.

While the others have given good advice, I'm gonna deep dive for you since I've recently been wasting my time on a similar thing. You already mentioned you knew about Risen Gargantuan, Blight Hound, and the Riding Wolf, and Tsukina already pointed out both Grongs. I'm going to assume you strictly want unique skins and models, which the above searches sadly don't properly account for. With that in mind, there's really not much else. Blizzard has been good at making looks that were once unique to one race become available elsewhere for everyone else, such as how the two Exile's Reach wolves (for Humans and Orcs) were made tameable through wolves found rarely in Island Expeditions, or how Vulpera's red cobras were added to the spawns of a rare in Voldun. Faction-specific looks are currently very few and far between thankfully, so aside from the five mentioned above, you're good to go with every other skin.
Of course, with the current sale going on, you can trade in a WoW Token for Battle.net balance, get a race change, get the pets, then race change back. It's a bit pricey gold-wise (and real money wise), but if you've got disposable income and are bored enough, anything is available to you on a single character! I did that with my hunter, swapping from Alliance to Horde specifically to grab the Blight Hound and living Grong. Am I poor now? Yes. Was it worth it? Yes. Is this going to bite me in the butt later when/if Blizzard makes them available to both factions? Probably.

Wow thank you so much for the advice everyone! And really thank you WerebearGuy! That’s exactly what I was looking for! It’s good to know Blizzard is keeping the list short. I hadn’t even thought about a faction change. Didn’t even know that our pets would carry over but I guess that makes sense. Definitely have a bit to think about now because running around on my night elf with the risen gargantuan sounds… very very tempting
