I say just do whichever race you prefer. You can easily make up that 33 levels in a day or two anyway; levelling is ludicrously fast now.
And I agree wholeheartedly with Tyger about Silverpine--it's quite an excellent story-oriented quest line. Easily the best-designed; only Stonetalon comes close, imo, and Silverpine far outstrips it. That said, you don't need to be Forsaken to do the Silverpine quests, so don't let that influence your choice of race!
I'd say make a lowbie hunter of every race & try it out, check the animations and so forth. I did this, and was hugely surprised that my big favorite--male undead--looks pretty awful (to me!! no offense UD hunters

) as a hunter. I just don't like the way mail armor fits them, or their shooting animations (their elbows turn inside out??). I was surprised to find that I fell in LOVE with the look of a female undead in mail, though; their shooting animations and movement in mail are, to me at least, superb. You might want to give your options a shot in-game before you settle on one race! Oh, and remember to kill your character to see the death animations--you may not like it, and as a hunter you might be feigning often
Tauren make pretty terrible hunters in my eyes; there's nothing to recommend them for PvE, and the only PvP help is War Stomp--useful as only an emergency vs melee, and imo we have enough tools against melee classes as it is. Plus, cast time >.> Like Torrent, it's a melee-range ability so a bit useless to us in the long run. Undead are okay racial-wise--WotF is decent for PvP. Orcs are great--they have a range of PvP- and PvE-friendly abilities for hunters, but then again, I play an orc so I'm partial ;P
I hear the Goblin racials are actually pretty good for hunters, but I haven't had a chance to try 'em. An upshot is that their pets look huge by comparison ;P
TL;DR, as I've written a novel again apparently: Levelling is fast as hell now, Silverpine is great but any race can do it, and try before you buy
