Hmm, the ones that stand out over the years for me are pretty varied. But I almost always prefer ones where a single person or group composes the entire soundtrack. Some movies that come to mind instantly are:

Himalaya. An example here: http://www.youtube.com/watch?v=OqnAxJgVw3Y (also rather topical given MoP )

About a Boy. Badly Drawn Boy did the soundtrack to the whole movie and it meshed beautifully. http://www.youtube.com/watch?v=etyzsrLhChM

Highlander. The original. Not all that other crap Can't get past Queen for a powerful soundtrack. RIP Freddy.

Crouching Tiger, Hidden Dragon. Yo Yo Ma can make a cello vibrate at the resonance of your soul

Once by Glen Hansand and Marketa Irglova.

The Wicked soundtrack (original cast) and the 2009 Star Trek movie soundtrack. Just yes, yum. <3
