Seems on the PTR the Red Corehounds are using the new HD mount model. I didn't see any documentation of this so apologies if this is known knowledge!

I already discovered it in the Beta last week when it was patched in. Aside from the Son of the Beast, all Core Hounds have the new model

I wonder if they left an original green core hound somewhere, if they're leaving Son Of Beast as he is deliberately.

Nope. I checked every green core hound ( aside from the one you have to summon in Blade's Edge, which is a pain to summon). All of them have been updated. It is possible that Son of the Beast may have been overlooked.
