Now from my understanding when you enter the beta it "copies" the toons you've already created and I guess what you do isn't saved once Cata goes live????
If that's the case, my question is what happens to the pets you tame in beta once Cata goes live if none of it is going to be saved?????

What happens in the Beta stays in the Beta. Remember when the polar bear cubs and the Amani Warbear were tameable in beta? The Beta is no different from the PTR, you can copy toons in but they can't be brought back to live afterwards.

Yup, what Saf said. Whatever you do on beta has no affect on your live realm characters. It's a separate entity entirely.
