I could see proto-drakes being an Exotic pet, really. I'd also like for basilisks to be tameable, they already have an eligible family skill (crystal gaze) and plenty of skins to choose from. They could fit nicely as tenacity but possibly as cunning as well.
And lastly, I think it would be really cool to be able to tame gryphons, hippogryphs, and wyverns. Even if Blizz decides they'd rather keep those mount- and flight point-only, I think they could do tameable sub-species of those animals (kind of like the Draenei and Broken...except they aren't animals but you get the point). If proto-drakes are supposedly basically devolved or ancestral dragons (I forget their story, sorry!), I think they could do the same thing with the others and make some more feral or wild versions that emerge as a result of The Cataclysm. Or maybe not that they just appear out of nowhere, but that the Cataclysm changed their bodies or altered them while the ones in captivity, in the relative safety of the cities, remain unchanged.
As incredibly cool as this sounds, that would just make hunters the most ridiculously over-played class in WoW. If they're going to do something like that, they'd have to make it available to every class/race/etc.. Otherwise EVERYONE would be crying about it or switching to hunters. Perhaps a better way to approach something like that would be to make it a quest line/rep grind similar to the Wintersaber Trainers and the Venomhide things (haven't been a high-enough level Horde to know what it's called), and just have one of those for every beast type out there. Clefthoof and talbuk trainers in Nagrand, Wooly Rhino trainers in Borean Tundra, etc. Or rather than one per beast type, just a general Nesingwary Trainers faction? But what I want more than new pets is the ability to tame a mount. This is my single longest-standing Hunter want. I don't care if it doesn't get any barding on it, I just want to go tame the mount I want. I'd be cool with tamed mounts not counting towards the collecting mounts achievements too.
I want a Clefthoof mount dang it.
I mean, we can tame an animal into fighting and dying for us, but not as simple transportation. Doesn't seem right to me.

Not just the critter rat model we have now either, but a fully remade creature. There are giant rats in a lot of stories and mythology, and I really like them in real life so having a fierce, large rodent would be pretty awesome.
